Description
We loved this quick version of Cioppino! I use up any miscellaneous seafood lurking in my freezer. Add some warm crusty bread and you have a delicious dinner
|
Directions
Spray a large saucepan with cooking spray and heat over medium-high heat. Add the onion and saute, stirring often, about 5 minutes. Add the garlic and chili powder and stir until fragrant, about 2 minutes.
Stir in the chicken broth, chile peppers and cumin; bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
Add tomatoes, bell pepper, shrimp and fish; increase heat to medium and return to a boil. Reduce heat, cover and simmer for 5 more minutes.
Gradually add the yogurt or evaporated milk until heated through.
Makes about 4-5 servings.
