Directions
Preheat oven to 350 degrees; grease and flour an 8x4 inch loaf pan.
In a large bowl whisk together eggs, oil, brown sugar, buttermilk and vanilla.
In a medium bowl whisk together flour, cocoa powder, salt, baking powder and baking soda and if desired, the espresso powder. Add dry ingredients all at once to the wet ingredients and stir to combine.
Stir in the zucchini and chocolate chips and pour batter into prepared pan.
Bake for 55-65 minutes until a skewer inserted into the center of the loaf comes out with only a few moist crumbs. Remove from oven and allow bread to cool for 15 minutes before inverting onto a wire racket cool completely. To serve, spoon ganache (warm 1/2 cup cream and add 1 cup chocolate chips, stirring until melted) over loaf and serve with coffee-flavored whipped cream. Makes 12 servings.

2/3 cup packed brown sugar
1/3 cup buttermilk

1 2/3 cups white whole wheat flour
1/3 cup cocoa powder
3/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. espresso powder (optional)
2 cups shredded unpeeled zucchini
4 oz. dark chocolate chips (3/4 cup)
