Description
Simple, no flour and no dairy! (But really good!!) This recipe works well with standard store-bought peanut butter, not the natural style.

Directions
Preheat oven to 350 degrees.
Beat the peanut butter, sugar, baking soda, and salt at medium speed with your mixer until well-blended.
Add the egg and vanilla and blend until incorporated.
Stir in chocolate chips.
Scoop dough by tablespoon size onto a parchment paper-lined cookie sheet and flatten slightly.
Bake cookies for 8-10 minutes. Remove from the oven and cool on the cookie sheet. (If removed too early, the cookies tend to be crumbly.) Yield 15-18 cookies.
