Directions
In a 5-6 quart slow-cooker, combine all ingredients except peanut butter, cilantro and peanuts. Cover and cook on low-heat for 10-12 hours or high-heat for 5-6 hours. Whisk in the peanut butter and serve topped with cilantro and chopped peanuts, if desired. Makes 6 servings.

2 (15 oz.) cans red beans, rinsed and drained
4 cups peeled, cubed sweet potatoes (about 1 pound)
8 oz. boneless, skinless chicken breasts, cut into bite-sized pieces
8 oz. boneless, skinless chicken thighs, cut into bite-sized pieces
2 (15 oz.) cans chicken broth
2 1/2 cups chopped green bell peppers (2 large)
1 (15 oz.) can tomatoes and chilies, undrained
1 T. Cajun seasoning
2 cloves garlic, minced
1/4 cup creamy peanut butter
Snipped fresh cilantro
Chopped peanuts (optional)
