(I used a turkey ham, cut it up into 1-inch cubes and then processed it in a food processor.)

Directions
Preheat oven to 350 degrees. In a large bowl combine eggs, bread crumbs, onion, pineapple juice, mustard, pepper and salt. Add ground ham, pork and apricots; mix well. In a 3-quart rectangular baking dish, lightly pat mixture into a 9x5 inch loaf.
Bake for 45-60 minutes or until an instant-read thermometer inserted in center of loaf registers 165 degrees, brushing several times with half of the apricot glaze during the last 10 minutes. Use spatulas to transfer loaf to a platter. Cut into thick slices and serve with remaining half of the apricot glaze. Makes 8 servings.
Apricot Glaze: In a small saucepan combine 1 1/2 cups apricot preserves, 3 T. unsweetened pineapple juice, 1 T. Dijon mustard, 1 T. cider vinegar, and 1/2 tsp. ground ginger. Cook and stir over medium-low heat until bubbly. divide mixture in half, using half to brush on the loaf and the other half to serve warm with the loaf.

1/2 tsp. freshly ground black pepper

1 pound ground fully cooked ham
1 pound ground pork
2/3 cup snipped dried apricots
