Description
If you've never been to New England, you've probably never had a lobster roll, or at least you've never had a real one. Lobster rolls are served in buttered and grilled hot dog bun, sliced across the top (rather than the side like all the hot dog buns in the nation).

Directions
Gently combine the lobster meat, celery, mayonnaise and the capers in a bowl. Split the rolls and butter the *outsides*. Toast the rolls on a heated griddle until lightly browned. After toasting, place the rolls on individual plates and divide the lobster mixture evenly among the rolls.

Ingredients
1 pound of fresh cooked lobster meat (which is about 5 pounds of lobster in the shell) cut into small, bite size chunks
1 stalk of finely minced celery
1/3 cup of mayonnaise
1 tablespoon of chopped capers
a pinch of salt and ground pepper
4 to 6 hot dog rolls
1 1/2 tablespoon unsalted butter
