A super quick easy recipe that tastes like something from your favorite Asian restaurant. Really really tasty.

Directions
Saute chicken until done, then set aside.
In a medium saucepan combine red curry paste with coconut milk and simmer for 5 minutes. Add basil, bamboo shoots, fish sauce, brown sugar , chicken stock, chicken, and vegatables. Simmer for 10-15 minutes.
Serve over rice. Serves 3 or 4.

Ingredients
1/2 to 1 tbsp Thai Kitchen Red Curry paste
1 can light coconut milk
1/4 cup fresh basil
1/4 cup bamboo shoots
1-2 tbsp Thai Premium fish sauce
2 tbsp brown sugar
1/3 cup chicken stock
8 oz of your choice of vegeatbles (red pepper, green pepper, white/yellow onion, etc.)
8 oz of chicken
brown or white rice
