Midnight Cowboy Delight submitted by Mom Johnson
Description
This is a favorite among the "boys"! From Southern Living - always great recipes!

Directions
Preheat oven to 350 degrees and coat a 9x13 inch baking pan with cooking spray.
Make the crust: Stir together the flour, pecans, coconut, oats, cinnamon and salt in a bowl. Mix in the melted butter and press mixture into prepared pan in a thin layer, patting evenly into all corners.
Bake until set, about 20 minutes. Remove from the oven and set aside to cool for at least 30 minutes.
In a large bowl, beat the heavy cream with an electric mixer until stiff peaks form. Set aside.
Make the cream cheese layer: In another bowl, beat the cream cheese on medium speed until smooth, about 2 minutes. Gradually add the powdered sugar, beating until well blended, about 1 minute. Gently fold half of the whipped cream into the cream cheese mixture.
Spread evenly over the cooled crust.
Make the pudding layer: Whisk together the milk and both pudding mixes in a large bowl until well combined. Let stand for 10 minutes.
Spread mixture evenly over the cream cheese layer.
Top with remaining whipped cream. Sprinkle with toasted coconut and mini chocolate chips as desired. Dust with cinnamon. Cover and chill at least 2 hours before serving. 8-10 servings - more if serving to ladies; less if to men!!
