Balsamic Flaxseed Dressing submitted by Karen Johnson
Wonderful vinaigrette that packs in an extra omega-3 punch. It doesn't taste "healthy" either (like AJ would say).

Place flaxseeds in a spice mill or clean coffee grinder. Grind them into a coarse meal. Transfer to a small jar or container with a tight fitting lid. Add remaining ingredients, shake or whisk to blend. Store unused portion in refrigerator for a week.

Yield: 8 (1 T) servings 55 Calories per serving 6 grams of fat 1 gram saturated fat 80 milligrams of sodium

v 1 T whole Flaxseeds
v 2 T balsamic vinegar
v 3 T extra-virgin olive oil
v 3 T water
v 1 t dijon mustard
v 1 small clove garlic
v 1/4 t salt or to taste
v freshly ground pepper to taste
