Vegetable Stroganoff submitted by Mom Johnson
Like having Mac 'n Cheese with vegetables, only yummier!

Cook linguini, drain and rinse. Cook broccoli and carrots until crisp-tender. Combine cottage cheese, sour cream and 1/4 cup parmesan cheese in a small bowl; set aside. Saute onion, garlic and mushrooms in butter until onion is tender. Stir in the flour, salt and pepper until smooth; gradually add the milk, stirring constantly until smooth and thickened. Stir in the vegetables. Stir 1 cup of the vegetable mixture into the sour cream mixture. Add the remaining vegetables and heat thoroughly but do not boil. Add the linguini and toss to mix. Sprinkle with the remaining Parmesan cheese.

v 12 oz. package uncooked Linguini
v 2 cups broccoli florets
v 2 cups sliced carrots
v 1 cup creamed cottage cheese
v 3/4 cup sour cream
v 1/2 cup grated Parmesan cheese
v 1/2 cup chopped onion
v 1 clove garlic, minced
v 4 oz. jar sliced mushrooms, drained
v 3 T. butter
v 2 T. flour
v 1 tsp. salt
v 1/4 tsp. pepper
v 2 cups milk
