Apple Cinnamon Egg-free Muffins submitted by Karen Johnson
These are a wonderful muffin and you don't miss the egg.

1) Preheat oven to 350F.

2) In a large bowl, mix together butter and sugar. Add flour, baking powder, salt, cinnamon, and nutmeg. Mix until just incorporated.

3) Put batter into prepared muffin pan and bake for 14 to 16 minutes. Cool and enjoy

v 1 cup all-purpose flour
v 1 cup whole wheat
v 1 teaspoon baking powder
v 1/2 teaspoon salt
v 1 teaspoon cinnamon
v 1/2 teaspoon nutmeg
v 1/2 cup butter/ghee melted (or oil)
v 1/4 to 1/2 cup sugar (of choice and to taste)
v 1 cup unsweetened applesauce
