Description
These tasty treats we found in England.

Directions
1) Make the pastry - flour, butter, powdered sugar, 1/2 orange zest, vanilla seeds and salt in processor. Pulse til fine breadcrumbs. Add egg yolks while processing and 1 TBS ice cold water. When it starts coming together wrap in plastic wrap. Chill 1 hour.

2)Add apples, sugar, orange juice and remaining zest into a small pot, cover partially and simmer until apples are soft 7-10 minutes. Add half of blackberries and mash all til smooth, heat until thickened and then cool.

3) Preheat oven to 200C, line baking tray with parchment. Roll pastry to 1/8th of an inch thick. Cut into 4 6inch squares and spread 1/4 of fruit mix down the center. Leave an inch border around edge, and brush with egg white. Fold over pastry and crimp edges with fork.

4) Brush top with egg white, cut slits in top of each to vent and sprinkle with demerara sugar. Bake for 12 - 15 minutes, until golden. Enjoy

v 250g flour
v 125g butter, cubed and chilled
v 85g powdered sugar
v 1 orange zest and juice of 1/2
v 1 vanilla pod seeds (or 1 tablespoon vanilla)
v 1/2 tsp salt
v 2 eggs, separated
v 3 eating apples, peeled, cored and chopped
v 50g demerara sugar plus more for sprinkling
v 170g blackberries
