Description
In Norway this traditional pudding is always served in the afternoon on Christmas Eve. Often an almond is hidden in the pudding. The person who finds the almond in their bowl receives a treat (usually a marzipan pig)!

Directions
Heat oven to 300F and then turn it off.

Cook the rice in the water, allowing the rice to simmer under cover until the water has evaporated. Add milk and bring to a boil while stirring. Cover pot and place it in the warm oven for 1.5 hours

Return porridge to the stove top and reheat while stirring. Add salt and sugar. Stir and serve with a pat of butter on top. Sprinkle with cinnamon and sugar.

v 3/4 cup medium grain rice
v 1 quart whole milk
v 1/2 tsp salt
v 1 Tbsp sugar
