Mexican Salad submitted by Mom Johnson
I love this salad! It goes well with any Mexican-style meal, and is healthy! This is the original recipe for 2 people but I often double, triple or quadruple it for a crowd.

Toss together the salad ingredients. Whisk together the olive oil, lime, and honey. Season to taste with salt and pepper. (Add canned black beans if desired along with a BBQ'd chicken breast and you have an easy dinner!)

v 1 orange, peeled and diced
v 1 medium tomato, seeded and diced
v 1 avocado, peeled, pitted and diced
v 1/3 cup corn kernels, thawed
v 2 T. red onion, diced
v 1 T. chopped fresh cilantro

v 3 T. olive oil
v 1 T. fresh lime juice
v 1 T. honey
v Freshly ground salt and pepper
