Red and Green Salad with Cranberry Dressing submitted by Mom Johnson
Pretty for the holidays. Add orange slices for even more color!

In a food processor or blender, smoothly puree cilantro, shallot, vinegar, cranberry juice honey and mustard. Add dried cranberries to dressing. In a large, shallow bowl, mix salad leaves, cabbage, red onion, bell pepper, and dressing. Add salt to taste.

v 1/4 cup fresh cilantro
v 1 shallot, chopped
v 1/3 cup seasoned rice vinegar
v 1/3 cup cranberry juice cocktail
v 1 T. honey
v 1 tsp. dijon mustard
v 1/4 cup dried cranberries
v 10 cups baby salad greens, rinsed
v 2 cups shredded red cabbage or radicchio
v 1/3 cup thinly sliced red onion
v 1 red bell pepper, stemmed, seeded, and thinly sliced
v Salt to taste
