Broccoli,Cannellini Bean and Cheddar Soup submitted by Mom Johnson
Description
Another slightly healthier version of Broccoli cheese soup from Eating Well. I doubled the ingredients and froze portions for an easy dinner !

Directions
Bring broth and water to a boil in a medium saucepan over high heat. Add the broccoli, cover and cook until tender, about 8 minutes. Stir in the beans, salt and pepper and cook until the beans are heated through, about 1 more minute.
Transfer half the mixture to a blender with half the cheese and puree. Transfer to a bowl and repeat with remaining broccoli mixture and cheese. Serve warm. Serves 4-5




Ingredients
v 1 (14 oz.) can chicken or vegetable broth
v 1 cup water
v 1 pound broccoli crowns, trimmed and chopped (6 cups)
v 1 (14 oz.) can cannellini beans, drained and rinsed
v 1/4 tsp. salt
v 1/4 tsp ground white pepper
v 1 cup shredded extra-sharp Cheddar cheese
