Description
Consistency of black beans and can use same recipe for lentils.

Directions
Bring beans and triple amount of water to boil with meat and olive oil and bay leaves. Boil until soft (1.5+ hours). Cuajado. In middle of getting soft add potato (1) an calabasa squash, finish boiling. When tender add sofrito to beans. A little splash of vinegar and bring to boil. Simmer 10 more minutes. Salt to taste.

Sofrito:
Saute onion, garlic, green pepper, oregano in olive oil. Add tomato sauce and a little wine. Add paprika and saffron.

v 1lb dried red beans
v Ham hocks
v small chunk of slab bacon (tofu sausage)
v Chorizo - 4 inch piece sliced
v white or yellow onion
v garlic, 3-4 cloves
v 1/2 green pepper
v oregano
v bay leaves
v Tomato Sauce, 4oz
v Paprika circle sprinkle
v Saffron -2-3 threads
v white or red wine you would drink, just a little
v Potato
v Orange Squash
v Plantains 2-3
